Mug chocolate poeding

Makes 12 mugs or one big Pyrex (20 x 25 cm) dish full

Ingredients
100 g butter – melted
250 ml sugar
50 ml cocoa powder
220 g self-raising flour
1 t fine ginger
½ t fine clove
½ t fine cinnamon
1 t baking powder
2 ml salt
100 ml milk
5 ml vanilla extract
250 ml light brown sugar
125ml white sugar
100 ml cacao
500 ml boiling water

Method
Pre-heat oven to 180 C. Add the sugar and cocoa to melted butter in a mixing bowl. Add the flour, baking powder, spices and salt and mix. Add the milk and vanilla and mix thoroughly. Spoon the mixture into 12 small mugs that has been prepared with Spray ‘n Cook or the Pyrex dish. Mix the brown sugar, white sugar and cocoa and sprinkle over the batter in the mugs or Pyrex dish. Pour some boiling water over each pudding and bake for 40 minutes if you do it as a whole pudding in the Pyrex dish or about 15 minutes if you do individual portions. Serve with hot custard, cream or ice-cream.

MICROWAVE MUG CHEESCAKE

57 gr low fat cream cheese, softened to room temperature
1/2 cup low fat sour cream
1/4 teaspoon vanilla
2 tablespoons sugar
2 tablespoons egg white, slightly beaten
1/2 teaspoon lemon juice
1/2 teaspoon cornstarch (prevents liquid from forming) (maizina)

For “mix ins”, add 1 tablespoon mini chocolate chips, or swirl in (not stir) 1 tablespoon jam of choice.

In a 1 cup or larger microwave proof mug, beat the cream cheese until light and fluffy with a small whisk. Mix in the sour cream, vanilla, sugar, egg, lemon juice and cornstarch. Whisk about 2 minutes until light. Alternatively, the mixture may be mixed in a small bowl with a hand held electric mixer and then poured into the mug. Add any “mix-ins”, or swirl in jam at this time. Microwave on medium for 2 1/2 minutes* (in a 650 watt microwave). Since microwave powers are different, you may need to experiment. You want the center to just start to bubble, and then stop cooking. If it is allowed to bubble and cook further, the mixture will “break” and you’ll need to start over. Make a note of the successful cooking time for your microwave. Take out of the microwave and let cool to room temperature and then refrigerate until fully chilled, about 1 1/2-2 hours. If any liquid has formed, carefully pour out. Sprinkle with graham cracker mixture and top with any topping of your choice.

*I also had success with 1 minute 50 seconds on high.
Graham Cracker Topping (gebruik by ons marie beskuitjies)

1 tablespoon crushed graham crackers
1/2 teaspoon melted unsalted butter

Mix graham cracker crumbs and melted butter together in a small bowl. Sprinkle on top of mug

2 Tbsp.(eetl) butter
1/4 cup packed brown sugar (donker bruinsuiker)
3 Tbsp.(eetl) flour
2 Tbsp.(eetl) milk
Pinch salt
Chopped dark chocolate and/or dried cherries (optional)

In a heatproof mug or ramekin, melt the butter in the microwave. Stir in the brown sugar, flour, milk and salt. Don’t worry about getting it perfectly smooth.
Microwave on high for 1 minute — it will be done when it’s spongey looking and springy on top but still a bit gooey — like sticky toffee pudding. If you like, scatter chocolate and dried cherries overtop and let it sit – or stir a little – until the chocolate starts to melt.

Baking Matters: What is Packed Brown Sugar?

Why the special treatment for brown sugar?

Packing brown sugar just means pressing it firmly into the measuring cup. We find it easiest to fill the measuring cup first, then press the sugar gently down using the back of a spoon. You don’t need to use a lot of force. The sugar will compact and leave a quarter-inch or so gap at the top. Use the spoon to fill this in, press the sugar down again, and then repeat as needed until the measuring cup is filled.

What we’re doing is pressing out the pockets of air that get trapped between the sticky grains of sugar. If we didn’t do this, our volume measurement would be off. We only want to measure the sugar, not the air. Packing the brown sugar is also a way of making sure the measurement is consistent from batch to batch and from cook to cook.

Jy kan bo-op ‘n paar sjokolade chips of neute of gebreekte stukkies sjokolade sit om af te eindig.
Smelt jou botter in ‘n mikrogolf veilig bak of beker (ongeveer 12 sekondes). Voeg die olie by jou gesmelte botter en meng goed Voeg in jou vanielje en water, roer goed.
In ‘n aparte bak of beker, kombineer al die droë bestanddele.
Druk dit in jou ramekins of in jou beker
Ek het ook ‘n paar sjokolade chips/of stukkies sjokolade bo-op gesit
Ek het begin met 45 sekondes in die mikrogolf maar geeindig teen sowat een minuut en tien sekondes toe is dit gaar.. Dit is 70 sekondes mense – tot warm, sag, lekker, donker, soet sjokolade goedheid. Sewentig sekondes! Dit is soos magic!
Bedien met room of vanilje roomys.

MICROWAVE STRAWBERRY VANILLA MUG CAKE WITH VANILLA

  • Makes one very generous portion
  • 1 tablespoon butter, softened
  • 1 large egg
  • 1/2 teaspoon vanilla extract (or 1 teaspoon+ if you love vanilla)
  • 2 tablespoons granulated sugar (or 3 tablespoons if you want it sweeter)
  • 1/4 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 2 to 3 tablespoons strawberries, diced (I used TJ’s frozen strawberries and diced them. Halve or quarter your berries as desired)
  • In a medium bowl, combine all ingredients (except strawberries), and whisk until batter is just smooth, but do not overmix. Gently fold in the strawberries. Prepare a mug by spraying it very well with cooking spray and pour batter into mug, taking care that there is plenty of room for growth. The batter/cake will nearly double in height in the microwave so select a large mug and do not fill more than halfway. (You may have leftover batter or you may get two mugcakes from this recipe, but don’t overfill or you will have a big mess) Microwave on high for 75 to 90 seconds, or until done. Microwave cooking times vary widely and I suggest standing in front of the microwave the entire time. It could be done in 60 seconds, it could take 2 minutes; it’s very hard to say but mine took about 90 seconds. While the mug cake is cooling, make the glaze
  • Vanilla Buttercream Glaze
  • 1 tablespoon butter,  melted
  • 1/4 cup powdered sugar
  • 1/4 teaspoon vanilla extract (or 1/2 teaspoon+ if you love vanilla)
  • 1 tablespoon+ cream (or milk)
  • Combine all ingredients (except for cream) in a small bowl and whisk, adding the cream based on desired consistency of glaze. Spoon glaze over the mugcake while it’s in the mug and allow glaze to soak and permeate into the cake. Or, remove cake from the mug by running a knife around the sides and inverting it onto a plate and spooning the glaze over it.

Ingredients

  • 1 Tbsp butter
  • 2 tbsp sugar
  • 2 tbsp applesauce
  • vanilla extract, few drops
  • 1/4 C All Purpose flour
  • 1/8 tsp baking powder
  • pinch of salt
  • 1 tbsp butter
  • 2 tbsp flour
  • 1 tbsp brown sugar
  • 1/4 tsp cinnamon

Instructions

  1. In a mug soften 1 tbsp of butter in microwave, about 5 seconds. You don’t want it melted, just soft. Stir in 2 tbsp of sugar and mix until well incorporated. Stir in applesauce, vanilla (just a tiny bit, we’re talking drops), flour, baking powder, and pinch of salt; stirring until just combined. Use the back of your spoon to smooth it out in the bottom of the mug.
  2. Want struesel? Of course you do! In a separate, small bowl, combine 1 tbsp of butter, 2 tbsp of flour, 1 tbsp of brown sugar, and 1/4 tsp cinnamon. Use your fingers to to pinch the butter and mix it in with the other ingredients. When it starts to look like lumpy sand (appetizing, eh?) and all ingredients are combined, pour on top of cake batter in mug.
  3. Cook in the microwave for 50-80 seconds depending on your microwave. At 1 minute, my microwave cooks it perfectly. It will look just barely set on top. You don’t want to overcook it and things tend to get ugly fast in the microwave. I suggest cooking it 50 seconds, and then in 10 second intervals checking after each interval until done. Eat white it’s still warm

  1. 2 Tablespoons of Red Velvet Cake Mix (I used Duncan Hines Premium Red Velvet Mix)Start by melting your butter in the microwave. Add sugars, vanilla and salt. Stir to combine. Separate your egg and add the yolk only to your cup. Stir to combine. Add flour and cake mix, then stir again. Cook in microwave about 60 seconds. Let cool a minute or two. Cookie will be soft at first and will become chewier as it cools.Serve warm.

Ingredients

  • 1 Tablespoon Butter
  • 1 Tablespoon Granulated White Sugar
  • 1 Tablespoon of firmly packed Dark Brown Sugar
  • 3 Drops of Vanilla Extract
  • Small Pinch of Kosher Salt
  • 1 Egg Yolk (discard the egg white or save for different recipe)
  • Scant ¼ of All Purpose Flour (slightly less than ¼ of a cup)
  • 2 heaping tablespoons of Semi Sweet Chocolate Chips

Instructions

  1. Start by melting your butter in the microwave. Butter should just be melted, not boiling.
  2. Add sugars, vanilla and salt. Stir to combine.
  3. Separate your egg and add the yolk only to your cup. Stir to combine.
  4. Add flour, then stir again. Measure a scant, slightly less than full, ¼ cup of all-purpose flour.
  5. Add the chocolate chips, and give a final stir. Now your mixture will look like cookie dough.
  6. Cook in microwave 40-60 seconds, start checking for doneness at 40 seconds. Mine takes 50 seconds. Do not cook past one minute, just like a regular cookie, this will continue cooking as it cools. If the cookie is dry or cake like, try less time.
  7. Serve warm.

  • Non-stick cooking spray
  • 3 tbs flour
  • 1 tbs + 1 teas sugar
  • 2 tbs  brown sugar
  • 1/8 teas salt
  • 1/8 teas baking powder

  • 1 egg
  • 1/4  teas vanilla extract
  • 1 tbs vegetable oil
  • 1 tbs milk
  • 1 ripe banana, mashed

Preparation:

Spray a microwave safe mug with cooking spray.

In a bowl, or right in the mug, whisk flour, sugar, salt, baking powder, and soda. Add egg and combine until just incorporated with dry ingredients. Mix in vanilla, oil, milk and mashed banana.

Pop into the microwave for up to 3 minutes, with no fear to stop and check after 90 seconds for doneness.

Like all magical things that come out of the microwave, the inside of this will be hotter than the surface of the sun when you first remove it from the microwave. Give it a few minutes.

Seriously, that easy.

1/4 cup of all-purpose flour

Start with a microwave safe mug, a tablespoon of butter and one big heaping tablespoon of Nutella.

Melt the butter and Nutella together in the microwave, about thirty seconds. Add two firmly pressed rounded tablespoons of brown sugar, 1/2 teaspoon of unsweetened cocoa powder, a small pinch of kosher salt and 1/4 teaspoon of pure vanilla extract and stir together well.

Then add the yolk from one large egg, and stir again. Do not use the egg white, it makes the cookie gummy and cake like. Add 1/4 cup of all-purpose flour and stir together again.

Cook in microwave for about one minutes. Let cool for about a minute and enjoy!

Frosting:
Soften one tablespoon of butter and one ounce of cream cheese in the microwave for ten seconds. Stir in half a cup of powdered sugar to combine. Put it in the fridge while you make your cake.

Cake:
In a measuring cup add the following ingredients in this order:
1 egg
1/2 cup sugar
1/3 cup oil
1/2 cup flour
1/2 tsp vanilla
1/4 tsp salt
1/2 tsp baking soda
1 tbls cinnamon
1/4 tsp cloves

Mix together. Fold in 3/4 cup shredded carrot and, if desired, 1/4 cup chopped nuts (pecans or walnuts)

Pour into mason jar, large mug, or bowl. Microwave for two minutes to start. Check, then microwave longer (1-2 minutes depending on the power of your microwave). Remove from micrwave, add frosting. Eat!

Stir in cocoa powder. Add flour, baking powder and salt and stir until well combine. Mix in chocolate chips. Set microwave on 50% power and cook mixture 1 minute 50 seconds – 2 minutes 30 seconds (time will vary based on varying microwaves wattage, don’t overcook or it may result in a tough brownie). Serve warm topped with ice cream and chocolate sauce or caramel sauce and sea salt, if desired.

Add dry ingredients to large coffee mug

Add egg, mix

Pour in milk and oil ,mix

Add choc chips and vanilla essence, mix

Put mug in microwave for 3 min`

It will rise over the top of mug

Allow to cool, decorate with icing sugar

Meng hierdie droë bestanddele net goed – nie nodig om enigiets te sif nie.
1 Eetl olie
2 Eetl water
